Our mission

The Ali Bin Ali group wanted to work with DUCASSE Conseil to conceptualize 2 restaurants it operates in the new Galeries Lafayette stores in Doha (Qatar).

Based on a predefined artistic brief, and taking into account the supply constraints inherent to the region, DUCASSE Conseil’s consultant chefs created over 150 recipes for 2 different points of sale within a high-end shopping center.

Our approach

  • 01

    Support to set up a restaurant and tearoom/patisserie

    Before creating over 150 recipes for these 2 food establishments, the entire team considered the specifics of Middle Eastern cuisine, popular with local customers, such as spices, seasonings and presentation. We then added a Western touch to propose original recipes.

    Staff training

    The various kitchen staff members and the entire front-of-house team were trained to ensure the highest quality of service, using service scripts we drafted in accordance with local customs.

    Launch assistance

    The DUCASSE Conseil project team was on hand at both openings to ensure that this pivotal period went smoothly.

  • 04

    Quality follow-up

    Quality controls are carried out regularly to make any necessary adjustments and to stay in contact with the operating staff.
