2 concepts within a shopping mall in the Middle East

The Ali Bin Ali Group's Hospitality Division wanted to collaborate with DUCASSE Conseil to create the concepts of two restaurants it operates within the Galeries Lafayette in Doha (Qatar).

Our mission
Based on a pre-defined artistic brief and taking into account the supply constraints inherent in this region, we created more than 150 recipes for 2 different points of sale in the high-end mall.

Our approach
Support in a restaurant and pastry café creation
Before creating more than 150 recipes for these 2 restaurants, our team focused on the specificities of the Middle Eastern cuisine, appreciated by the local customers: spices, seasonings, presentation. We then brought a western touch to offer original recipes
Team training
The various kitchen brigades as well as the entire service team have been trained so that the quality of service is ensured, and refer to service scripts written by us in accordance with local habits.
Opening assistance
The DUCASSE Conseil team goes on site each time a restaurant is opened so that this pivotal period takes place comfortably.
Quality follow-up
Quality folllow-ups are regularly organized to bring corrections and keep in touch with the operational departments.
