The restaurant "Au Petit Riche" requested DUCASSE Conseil to reposition its offer in order to respond to new consumer trends while refocusing it around the Loire Valley terroir

Our mission

For its reopenning, Au Petit Riche wished DUCASSE Conseil to improve the quality of its culinary services based on the Loire Valley terroir in order to become the Parisian reference for bourgeoise cuisine.

Our approch

Repositioning and evolution of the culinary offer

DUCASSE Conseil has repositioned the spirit of the cuisine by developing major markers such as the weekly menu, signature dishes and products from the Loire Valley region. This repositioning was consolidated with the creation of new offers (brunch and after work).

Creation of recipes

The implementation of the brasserie’s new positioning resulted in the creation of 20 recipes for both savory and sweet dishes.

Training of the teams

In order to ensure a good understanding of the concepts and to transmit the culinary philosophy of the project, DUCASSE Conseil trained the culinary and pastry teams of the restaurant Au Petit Riche in its R&D kitchen in Paris by integrating all the recipes.

DUCASSE Conseil brought us all the expertise through their organized team of serious experts, with precise processes designed to make the project progress within the given timeframe and in line with the objectives we set together. The team demonstrated a flawless professionalism in their understanding of our initial issue thanks to their pedagogy, reliability and availability, but above all through their passion and culinary mastery. We collaborated with a very talented and humble consultant chef. Surrounded by an efficient and pleasant team, the whole project has been a great pleasure. The results can be seen in the quality of our new dishes and in the increased skills of our teams. We recommend their services without hesitation.
