A panoramic view for an attractive offer: a new look for the Belvédère.

With a breathtaking view on the lake, the contemporary Belvédère brasserie reopened in June 2018 after a year of renovation works. Wishing to combine a quality F&B offer with the atmosphere of the place, DUCASSE Conseil was chosen to create the whole new offer

As part of the reopening of the restaurant, the Belvédère teams called on DUCASSE Conseil to create the new menu according to the different operational constraints (optimized layout for large volumes, use of local products...)

Our approach
Creation of the new offer
In accordance with the specifications, our team defined the identity of the new offer, created the menu structure and identified all its components. The 68 recipes created were all tasted and validated upstream. Our team also selected the range of tableware (glassware, cutlery and tableware)
Team training
In order to give them the means to deploy the offer, the chef and the whole brigade were trained before the official opening. Our experts also supported the kitchen and service teams during the mock services, the opening and performed several quality follow-ups.
Seasonal menu renewal
In order to boost the food offer and respect the products served over the seasons, the DUCASSE Conseil team renews the menu twice a year, with a 50% rotation of the dishes. They also create festive menus (Christmas, Eve, Mothers day, Easter)
