Elior North America asked DUCASSE Conseil to create a French brasserie inside of their US headquarters, in order for it to become a showcase of their know-how.

Our approach

Market and potential competition audit in Charlotte

A chef and a consultant visited the surrounding restaurants and analyzed the successful places, the average prices and the wishes of the Charlotteans

Coordination with the interior designer

DUCASSE Conseil commissioned an interior designer to design the blueprint, create the visual identity, the interior design and assist during the construction works, in collaboration with Elior North America.

Creation of the F&B offer

Lunch and dinner menus, "à la carte", tea time, Sunday brunch: DUCASSE Conseil created all the recipes (seasonally renewed) and also set up a signature cocktail menu to make this restaurant a friendly place, open to everyone.

Training of kitchen and service teams

To allow an impeccable execution of the offer created, DUCASSE Conseil regularly trains the kitchen and service teams in Charlotte, thanks to its chefs and qualified service experts.

Quality follow-ups

At every menu renewal, DUCASSE Conseil carries out a quality follow-up and writes a report with corrective actions. This allows the service to be consistent in terms of quality.
