Benchmark and F&B concepts

DUCASSE Conseil reviewed the local market restaurant offer, brought a wider view on international similar concepts, and designed F&B offers accordingly for a bar, a club house, a brasserie and a music hall.

BOH zoning and equipment

DUCASSE Conseil reviewed all the plans and projections, gave recommendations for an optimized zoning (production and storage spaces, equipment, circulation), as well as the culinary equipment list.

Business plan

DUCASSE Conseil reviewed the operational and financial hypothesis of the business plans. We also took part in key people recruitment, shift organization and sourcing (tableware and raw materials).

Opening assistance

From training to mock services and opening, DUCASSE Conseil assisted Palmeraie Développement’s management and operational teams through a continuous follow-up.
