DUCASSE Conseil goes to sea!


French yachting company based in Marseille, Ponant falls within the French tradition of yacht cruising through exceptional destinations and high quality on board service. As part of a desire to move upmarket, Ponant mandated DUCASSE Conseil to redesign the F&B offer on board, so as to strengthen its position in the luxury tourism sector.

From the conception of the culinary offer to the training of all the company’s chefs, this long-term project aims to ensure that PONANT’s culinary standards are as high as possible, that the operational and logistic contraints are respected and to satisfy the exacting requirements of Ponant's French and international guests.

Our approach

Quality follow-up

To ensure a consistent quality of the offer, DUCASSE Conseil teams regularly go on board and make the necessary adjustments with the Ponant teams.

Training of the operational teams

DUCASSE Conseil helps Ponant operational teams to implement the new offer: organization of training sessions in our centres, support to the crew on board by a chef and a service expert, telephone assistance.

Creation of the new food offer

Based on the audit's conclusions, the DUCASSE Conseil teams create annually 100 recipes for all outlets and all times of the day. Creating a beverage offer, writing service scripts, selecting appropriate tableware items as well as organizing Gala dinners are also part of our mission.

Operational audit

We carried out a complete operational audit on board, covering market elements (the clientele, the competition), the products and services on board, the purchasing and supply processes, the business model and other external and internal constraints.
