To celebrate the inauguration of the Commandant Charcot, DUCASSE Conseil assisted the Ponant kitchen teams in the organization, preparation and realization of an inaugural dinner on board.

Deployment assistance, trainings and quality follow-up

The implementation success of the culinary concepts was ensured through support for the launch of the on-board offer and by training the teams on the new recipes. The pre-identified managers took an immersion program within the DUCASSE establishments in order to transmit the Chef's philosophy to them. Regular quality follow-ups have also been set up to guarantee the onboard execution excellence.

Culinary identity and tableware

After getting to know the environment and the passengers' expectations, DUCASSE Conseil created all the culinary concepts present on board as well as the scripts of the "Ponant moments". The culinary identity was reinforced by a meticulous selection of tableware in perfect harmony with the cuisine proposed by Alain Ducasse.
