Our approach
On-site Audit
DUCASSE Conseil went on site to carry out a complete operational audit of the establishment and the local market to know available products, consumers' expectations and the local competition.
Kitchen plan and equipment review
The kitchen had to be redesigned to optimize space and speed of delivery for the establishment's new banqueting offer.
Creation of recipes and service scripts
Fifteen recipes with step-by-step technical sheets were created with a special focus on visuals. Five culinary animations presented on buffets were also developed with detailed set-up diagrams and service scripts.
Training
DUCASSE Conseil trained the chefs to ensure correct execution of recipes while sharing good practices in hygiene and food regeneration. The service teams were also able to perfect their service sequences through personalized on-site training in order to ensure events for 300 people.
