Seeking to branch out with a new dessert parlor concept, Patchi called on DUCASSE Conseil for an 18-month assignment.

To identify the client’s needs and resources, our team visited the existing sites and the production laboratory. Working closely with the management staff, our chefs and consultants decided on the scope of the new concept, based on predefined objectives for volumes, capacity, costs and logistics.
To satisfy the client’s expectations, our chefs and consultants created recipe cards for individual and shared desserts, macarons, candy, chocolates and petit fours. The project team also devised 26 drinks recipes including granitas, mocktails and hot chocolates.
Our consultant pastry chef trained the kitchen staff in the laboratory and on site to ensure they had all the necessary techniques and recipes to make the entire range of sweets and guarantee the highest quality. At the same time, our service and bar experts trained the expeditors and front-of-house staff.
The DUCASSE Conseil teams trained the expeditors and front-of-house staff on site to achieve the overall customer experience desired. This meant organizing production stations, teaching them “French-style” front-of-house service practices and training bartenders to prepare mocktails and hot drinks.

Shepherd’s Hollow, which boasts a beautiful reception area, wanted to
showcase American cuisine with French influences for
its banquet events, and improve service standards.
Since 1850, the “Au Petit Riche” restaurant, located in the Grands Boulevards neighborhood of Paris, has been an institution for the traditional French hearty, homemade-style cooking known as “cuisine bourgeoise”.
